How many times should I wash each part in wudu?

Once is required and three times is the sunnah. Washing each part one time, fully covered with water, makes your wudu valid. Washing each part three times is the best practice, and the Prophet ﷺ sometimes did twice. Don't go beyond three.
Once, twice or three times: all from the Prophet
The companions recorded all three ways:
- Once: Ibn Abbas said the Prophet ﷺ made wudu washing each part once (Sahih al-Bukhari 157).
- Twice: Abdullah ibn Zayd said he washed each part twice (Sahih al-Bukhari 158).
- Three times: Uthman showed people the Prophet's ﷺ wudu, washing each part three times, and said whoever does wudu like this and prays two rak'ahs with focus has his past sins forgiven (Sahih al-Bukhari 159).
So no option is wrong. Three is the most complete; one is enough when you're short on time or water.
Which parts get three, and which get one?
Using the Quran's list of the wudu parts:
- Hands, mouth, nose, face, arms, feet: up to three times each.
- Head: wiped once according to the Hanafi, Maliki and Hanbali schools. The Shafi'i school recommends wiping it three times.
- Ears: wiped once, together with or right after the head.

Why not more than three?
A Bedouin once asked the Prophet ﷺ about wudu, and he showed him washing each part three times, then said that whoever does more than this has done wrong and gone too far (reported by Abu Dawud and an-Nasa'i). Scholars agree that a fourth wash on purpose is disliked, because it adds to the sunnah and wastes water. See How much water should I use for wudu?
Lost count?
If you're unsure whether you washed twice or three times, count it as the lower number and do one more, as long as you're not caught in endless doubt. If you keep repeating "just to be sure," that's a sign of waswas, and the cure is to stop at three and move on. See What is waswas and how do I deal with it?
- Washing each part once, fully, is required.
- Three times is the sunnah; twice is also from the Prophet ﷺ.
- The head is wiped once in most schools (three times for Shafi'is).
- Going beyond three on purpose is disliked.
