Is imitation crab halal?

Yes, imitation crab is usually halal, because it's made mainly from white fish. Fish is halal for all Muslims. Just check the label for mirin or rice wine, and note that some brands add a little real crab extract, which most scholars allow but Hanafis traditionally don't.
What imitation crab is made of
Imitation crab, also called crab sticks, seafood sticks or surimi, is a processed fish product. It's mostly:
- Surimi: minced white fish, usually Alaska pollock
- Starch (wheat, potato or tapioca) and water
- Egg white, sugar, salt and vegetable oil
- Flavourings and a red or orange colouring on the outside
The main ingredient is fish, and fish is halal without slaughter. Allah says:
The Prophet ﷺ also said about the sea that its water is pure and its dead animals are lawful (Sunan Abi Dawud 83).
Ingredients to check
- Mirin, sake or rice wine: some Japanese-style brands add these for flavour. Most scholars say to avoid food with added wine. See Can I cook with wine as a Muslim if the alcohol burns off?
- Crab extract or flavouring: a small amount of real crab may be added. This matters only if you follow the Hanafi view below.
- Additives: colourings and flavour enhancers are usually plant-based or synthetic. See Are E-numbers halal?
The crab question
Most scholars (Maliki, Shafi'i and Hanbali) say all sea creatures, including crab, shrimp and lobster, are halal. The traditional Hanafi position allows only fish from the sea, so many Hanafis avoid real crab. Imitation crab is fish, so even under the Hanafi view it's generally fine, unless the product contains real crab meat or a meaningful amount of crab extract. If you follow the Hanafi school, check for "crab" in the ingredients. For more on this difference, see Can I eat shrimp and other seafood?
Sushi and salads
Imitation crab often turns up in California rolls, seafood salads and sushi platters. The crab stick may be fine, but sushi rice is commonly seasoned with vinegar and sometimes mirin, and the mayo or sauces can contain other ingredients. Ask the restaurant, or choose a halal-certified sushi place.
- Imitation crab is mostly white fish, which is halal.
- Check for mirin, sake or rice wine in the ingredients.
- Hanafis may want to avoid brands with real crab extract.
- Sushi using crab sticks can have other ingredients to check.
