What if I break my fast a few minutes early?

If you broke your fast early on purpose, that day is broken and you need to make it up. If it was an honest mistake, scholars differ: most say make up one day to be safe, while some say the fast is valid. Either way, there is no sin for a genuine mistake and no kaffarah.
The fast lasts until sunset
The fast ends at sunset, when Maghrib time begins. Not a few minutes before, even if you're very hungry. The Prophet ﷺ said that when night comes from this side and the day leaves from that side, and the sun has set, the fasting person may break the fast (Sahih al-Bukhari 1954).
If you did it on purpose
Breaking the fast knowingly before sunset, even by a few minutes, means the fast of that day is broken. Repent and make up one day after Ramadan. The Hanafi and Maliki schools add kaffarah for deliberately breaking a Ramadan fast by eating or drinking, while the Shafi'i and Hanbali schools require only the make-up day. See What is kaffarah for breaking a fast?
If it was a mistake
This happens more than you'd think: a wrong app setting, a timetable for another city, a cloudy evening, or someone at the table starting too soon. Asma bint Abi Bakr reported that once, in the Prophet's ﷺ time, people broke their fast on a cloudy day and then the sun came out again (Sahih al-Bukhari 1959). When one of the narrators was asked whether they had to make it up, he replied that it had to be made up.
- The majority (including the four schools): make up that one day. There is no sin and no kaffarah.
- Some scholars, including Ibn Taymiyyah: the fast is valid, because a mistake is forgiven, like eating forgetfully (Sahih al-Bukhari 1933).
Making up one day is the safer choice and takes away any doubt. If you realise the mistake while it's still daytime, stop eating straight away and wait for sunset.
