Why is wine allowed in Jannah but not on earth?

Because the drink of Jannah is not the intoxicating alcohol of this world. The Quran says it brings no headache and no intoxication, so none of the harm that makes alcohol forbidden here exists there. Avoiding alcohol now is also a test of obedience, and Muslims believe it is rewarded.
Why alcohol is forbidden on earth
The Quran calls intoxicants a handiwork of Satan and tells believers to stay away from them:
Scholars explain that the reasons include clouded judgement, addiction, damage to health, and the harm it does to families and society. The prohibition is about the harm the drink causes, not about the word "wine" itself.
What is different in Jannah
The Quran does describe "rivers of wine delicious to drink" in Paradise (Quran 47:15). But it also says of the drink there:
Another verse says it will cause neither headache nor intoxication (Quran 56:19). In other words, this is a pure drink with none of the effects that make the earthly kind forbidden. Scholars note that things in Paradise share names with things on earth but are of a different nature, and only Allah knows their true reality. See What are the rivers of Jannah?
Why wait?
Islam teaches that this life is a test. Giving up something that many people enjoy, because Allah has forbidden it, is a way to show faith and self-control. The Prophet ﷺ said that whoever drinks alcohol in this world and does not repent will be deprived of it in the Hereafter (Sahih al-Bukhari 5575). The hadith says "does not repent," so the door of repentance stays open until death.
There is no contradiction in forbidding something here and giving a pure form of it there. The test is in this life, and the reward is in the next. Obeying Allah now is never wasted.
Does this help if I struggle with alcohol?
If you drank before Islam or still struggle, you are not alone, and sincere effort counts. You do not need to be perfect before you become Muslim. See Do I have to quit drinking before I become Muslim? For what else awaits believers there, see What will we eat in Jannah?
